Like many folks, I like ramen. An entire continent of people can't be all wrong about noodles, and were nice enough to share one of their simplest dishes with us pale peons.I have left Top Ramen behind long ago in the college years. It was a good hot soup for dead cheap and worked for the era it lived in.After my first paycheck as an adult, ramen was left to memories. It just wasn't THAT tasty or fulfilling. Years later (okay, decades, I admit it) I'm finally back to cooking for one, but now I have money. So I am at the market looking at quick simple foods for the (sob) single person that I am.I discover the ramen aisle. Cue up the spotlights, the meme with the person "getting it" in surprise, the big ol' "O" face of a utopian find! There are AISLES of this stuff now?There wasn't just "ramen" on the floor anymore, Top Ramen was bottom shelf in this world, or was it even there at all? I found ramen of every flavor, noodle, brand possible. Tonkatsu to Ning Shom, I had a new world to explore! Happiness was on the horizon! I filled my cart with so many different kinds, a true smorgasbord of noodles and more noodles.On this grand ramen adventure I prepared one cup on a cold foggy Saturday afternoon. I was going in raw this time, no boiled egg or beef slices. No mushroom or spinach. Just me and the noodle. Me and the noodle. I sat down with my bright red cup and dipped into the future.Promptly set my mouth on fire and paralyzed my face! The tongue wanted to leave the vicinity, teeth tried to retract, the lips called 911. This stuff was on FIRE and I had just put liquid lava on board. None of this wussy "The floor is lava" baloney, I went straight to the face!And I was in love. Yup, I am firmly in a relationship with these small cups of lava. I have changed my facebook and instagram status. This little red cup of fire-in-the-hole! is mine now.Prepare yourself. If you're a weenie with spicy, see yourself out, this isn't for you. Don't even do it on a dare, or drunk. If black pepper is daring to you just...Tonkatsu or something. Go beefy, but go home. This here is for those who are big, bad and SERIOUS about their heat and their noodles.Don't even kiss someone who just had an encounter. Well, maybe after five minutes, but no sooner.My sodium levels are protesting, but I keep slurping. I might need an intervention.

I saw a YouTube video on instant ramen by chefs. This is one that they liked. So I gave it a try. Very good noodles and the broth excellent. Not overly spicy. One thing is that when I heated it in the microwave the broth overflowed. So I tried a shorter time and it was fine. Good value and delicious.

Nongshim Shin Black - One of the best instant ramen noodle options
Love ramen noodles...dined on them throughout my years in college. Compared to the instant brands I used to have in college (Maruchan, Top Ramen, etc. that would cost around $4 for 20-30 packets), Nongshim is several steps up, but also as much as 10x the price per packet.First and foremost, Ramen is a best as an occasional meal option if you need something quick...I would not recommend choking down a bowl of instant ramen daily as they're loaded with sodium...once or twice a week shouldn't hurt much. Secondly, most of these "better tier" brands have a spicy kick to them...you can reduce the heat (and sodium) by using less of the seasoning.What separates Nongshim Shin Black from other ramen types and brands is the broth...the bone beef broth is amazing, rich, and tasty. Gives an overall nice beef flavor. The noodles are higher quality than other brands...they have a perfect tenderness to them. The toppings (mushrooms and other veggies) are also a nice touch considering most other instant ramen noodle brands don't have any toppings at all.For those who have to be more careful of their sodium intake, cut down on the amount of seasoning...I've found that half the "red seasoning" packet adds enough kick and flavor to be sufficient for most. You can always add your own seasonings as well. Nongshim, as far as instant Ramen, is among the best in the market. If you enjoy Ramen, give it a try.
